So I have a FLIP video camera, a Canon video camera, and a couple others and I was wondering if I could get their video feed from the camera and display it on some sort of screen (iPhone, monitor, laptop)?

Buy a surveillance camera. It's easier.

Use a EasyCAP USB Video Capture to connect to your camera on one end and to the laptop on the other end and you pretty much have way to see the live feed on your laptop.
